Maftoul salad

Ingredients

  • 500g of Maftoul (couscous)
  • 1/4 cup of olive oil
  • 1 cup of raisans
  • 1 onion, 1⁄4-inch dice
  • 1 bunch spring onions, 1/4-inch chop
  • 1 bunch parsley, finely chopped
  • Fresh red chili peppers, sliced thinl to taste
  • 1 lemon, juiced
  • 1 teaspoon of finely ground black pepper
  • 1 teaspoon of Za'atar mix

Method

  1. For 500g of Maftoul, bring 4 cups of water and one tablespoon of salt to the boil
  2. Toast the Maftoul in 2 tablespoons of olive oil in a frying pan for 4 minutes on medium-high heat, stirring while it toasts
  3. Add the toasted Maftoul to the boiling water and let simmer for 12 minutes. Drain, fluff with a fork and spread on tray to cool
  4. Meanwhile, add cup of water to cup of raisins and simmer in a pan for 10 minutes. Then let cool and drain
  5. Sauté onions in 1 teaspoon of olive oil, and let cool. Combine green onion, parsley, and chilli in a bowl.
  6. In the bowl of cooked maftoul, add raisans, both kinds of onions, pasley, chilli, 1/4 cup of olive oil, lemon juice, pepper and spice mix
  7. Mix together and serve
