Maftoul (Couscous) Dessert


  • 2 cups (½ litre) (11 oz) (315 gm) Palestinian couscous (maftoul)
  • 2/3 cup (160 ml) almond milk, fruit juice or any liquid you would like to infuse the couscous with
  • 1/4 cup (60 ml) (1¾ oz) (50 gm) sugar (see notes)
  • 1 teaspoon cinnamon (see notes)
  • 1 tablespoon (15 ml) orange blossom water (optional)
  • 1 cup (240 ml) (5 oz) (140 gm) chopped walnuts
  • 1/2 cup (120 ml) (2½ oz) (70 gm) pistachios
  • 1/2 cup (120 ml) (2½ oz) (70 gm) almonds
  • Dried fruit for decoration
  • Confectioners' (Icing) sugar for serving


  1. Bring your fluid of choice to a boil, add the sugar, cinnamon and orange blossom water then add the couscous (maftoul)
  2. Cook over low heat while stirring for 2-3 minutes
  3. Turn off the heat, cover and set aside for 30 minutes
  4. Fluff the couscous (maftoul) with a fork
  5. Drain the couscous (maftoul) if there is any fluid left
  6. Add the nuts reserving some for decoration
  7. Arrange the couscous (maftoul) in a neat mound in your serving plate
  8. Decorate it with nuts and dried fruits
  9. You can dust with icing sugar if you would like it to be a touch sweeter but do that immediately before serving. Note: Sugar and cinnamon can be adjusted to taste
